cheap party snacks 
 
cheese ball 
zucchini/parmesan squares 
cocktail meatballs 
 
(this will serve a lot) 
 
cheese ball 
 
2   8 ounce packages cream cheese, softened to room temp.
8 oz.  cheddar cheese, grated
1 Tbsp  onion, minced
1 Tbsp  pimento, minced and drained
2 tsp  worcestershire sauce
1 tsp  lemon juice
1/4 tsp  garlic, minced
dash  of salt
  cayenne pepper to taste
  chopped pecans or chopped parsley
 
mix all ingredients (except the nuts or parsley) well and form into a 
ball. roll 
the ball in the chopped nuts or parsley, refrigerate for a few hours to 
let the 
flavors blend. serve with crackers. 
 
zucchini parmesan squares 
 
4 cup  grated zucchini (about 2 medium and 1 small)
1 medium  onion, finely chopped
1/2 cup  parmesan cheese (from the can is fine)
2 Tbsp  chopped parsley
1 cup  bisquick baking mix
1/2 tsp  nutmeg
1/2 tsp  salt
  a few dashes of hot red pepper sauce like tabasco
4   eggs
1/2 cup  vegetable oil
 
 
heat oven to 350:. butter a 9x13" baking pan. combine all of the 
ingredients except eggs and oil-stir in the zucchini and onions. beat the 
eggs and oil together and stir into the zucchini mixture. pour into 
prepared pan and smooth the top. bake until edges and lightly browned, 
about 25 minutes. cool in pan about 10 minutes before cutting into 
squares. can be served warm or at room temperature. can also serve 
spaghetti sauce (from a jar or homemade) along side of the squares. 
makes about 48 these can also be made ahead of time, wrapped well and 
frozen. just heat them in the oven until nice and warm. 
 
cocktail meatballs 
 
(i don't really have amounts so, i am guessing, i just mix them and they 
always 
come out great. 
 
1 1/2 pounds ground beef 
about 1/2 of an onion, grated 
milk, about 1/4 cup may add more if necessary 
oatmeal, about 1/4 cup 
 
mix all well and form into medium meatballs. brown them in a little oil, 
remove 
from pan and drain on paper towels. 
 
sauce 
 
3 Tbsp  soy sauce
3 Tbsp  brown sugar
3 Tbsp  vinegar either cider or plain
1/2 cup  catsup
 
mix in a bowl. place the meatballs in an oven proof dish, pour the sauce 
over them and bake at 400: for about 1/2 hour. these make a lot and can be 
doubled, i usually double the sauce. you can also use ground any type of 
ground beef from regular to ground round, just whatever the budget 
permits. jan
