Grits Souffle
this recipe came to me in the 1950's from my former piano teacher, a 
sweet little old lady who was raised on a plantation in the deep 
south. she was born in the 1870's, and said that this was one of her 
mother's recipes and called it southern souffle. at any rate, its 
wonderful! 
 
 
1 cup  uncooked grits
4 cup  salted water
3   egg yolks, beaten
1-1/2 Tbsp  butter (not margarine!)
2 Tbsp  flour
1-1/2 cup  whole milk
3 cup  grated cheddar cheese, divided use
3   egg whites
 
cook grits in salt water according to package directions. stir in the 
egg yolks, cooking until mixture is thick. set aside to cool. brown 
the flour in butter and stir in the milk and half of the grated 
cheese. when the cheese has melted, mix the cheese sauce into the 
grits. beat egg whites until stiff and fold into the grits. top with 
remaining grated cheese and bake at 350 f. for 30 minutes.
