Black Bean Burgers

7 cup | black beans, dried |
1 cup | bread crumbs |
1/2 cup | red bell pepper, diced |
1/4 cup | onion, diced |
8 | hamburger buns, whole wheat |
1 | egg |
2 Tbsp | dried cilantro |
2 Tbsp | olive oil |
1 tsp | cayenne pepper |

soak the black beans overnight. rinse the beans well. in a pot, bring 14 |
cups of water to a boil. add in the black beans and cook for about 20 |
minutes or until tender. drain if necessary. place the beans, onion, bell |
pepper, cayenne pepper, egg, bread crumbs and cilantro in a food |
processor. |
process the bean mixture. add more bread crumbs if necessary to make the |
mixture dry enough to form patties. shape into 8 or more patties. in a |
skillet, heat 1 tbsp of olive oil over medium heat. place four of the |
patties in the pan and cook for 2 minutes each side trying only to turn |
once. add 1 tbsp of olive oil to the pan each time you cook more patties. |
patties may be make a day ahead. refrigerate them until ready for use. |

also allows them to set well. |
