when i do a search on google for peanut butter cookies i find hundreds 
of recipes. i want to make cookies someone has tried and can vouch for. 
i have tried most of these recipes and liked them, took them to church 
and those that like peanut butter said they were very good.

peanut butter cookies 
note: one thing to remember, don't substitute the butter 
or margarine with whipped margarine or spread. your cookies will be 
1/2 cup  butter or margarine, room temperature
1/2 tsp  vanilla
1/2 cup  peanut butter, creamy or crunchy
1-1/4 cup  sifted
  allpurpose flour
1/2 cup  granulated sugar
3/4 tsp  baking soda
1/2 cup  brown sugar
1/4 tsp  salt
1 large  egg
cream butter, peanut butter, sugars, egg and vanilla together. sift 
together dry ingredients and blend into creamy mixture. roll into 1-inch 
balls, and roll in granulated sugar. place two inches apart on ungreased 
cookie sheets. bake at 375 degrees for 10 to 12 minutes. these cookies 
will puff up with large cracks across the tops while baking and flatten 
as they cool. they are chewy and not too crumbly if they don't cook too 
long. enjoy!

1/2 cup  vegetable shortening
1/2 cup  margarine
1 cup  brown sugar
1 cup  sugar
1 cup  peanut butter
2 large  eggs, beaten
1 tsp  vanilla extract
2-1/2 cup  all-purpose flour
1 tsp  baking powder
1/2 tsp  salt
cream together shortening, margarine, brown sugar, and sugar. beat 
in peanut butter, eggs, and vanilla. sift together flour, baking powder, 
and salt. blend into creamed mixture. measure by a rounded 
teaspoonful. form into a ball and flatten with a fork on an ungreased 
cookie sheet. bake in a preheated 375 degrees oven for 12 to 15 
minutes. yields: 140 cookies 
irresistible peanut butter cookies 
1 cup  granulated sugar
1 cup  packed brown sugar
1 cup  jif peanut butter
1 cup  butter or margarine, softened
2 large  eggs
2 cup  sifted all-purpose flour
1 tsp  baking soda
1 package  (16 ounce) semisweet chocolate pieces
preheat oven to 325 degrees f. cream together sugars, peanut butter 
and butter or margarine; beat in eggs. stir together flour and baking 
soda; add to creamed mixture. beat just until well mixed. stir in 
chocolate pieces. 
drop from teaspoon onto ungreased cookie sheet. flatten slightly with 
the back of a spoon. bake in 325 degree f oven about 15 minutes or till 
lightly browned. cool slightly before removing from pan to cooling rack. 
yields: 6 dozen cookies 
irresistible peanut butter cookie 
3/4 cup  creamy peanut butter
1/2 cup  shortening
1-1/4 cup  firmly packed brown sugar
3 Tbsp  milk
1 Tbsp  vanilla
1 large  egg
1-3/4 cup  all purpose flour
3/4 tsp  salt
3/4 tsp  baking soda
heat oven to 375 degrees. combine peanut butter, shortening, brown 
sugar, milk and vanilla in large bowl. beat at medium speed with mixer 
until well blended. add egg. beat until just blended. combine flour, 
salt and baking soda. add to creamed mixture at low speed. mix until 
just blended. drop by heaping teaspoonfuls 2" apart onto ungreased 
baking sheet. bake at 375 degrees for 7 to 8 minutes, or until set and 
just beginning to brown. cool 2 minutes on baking sheet before removing 
to counter top. 
special peanut butter cookies 
note: i have been making this cookie since 1949, but without the 
chips and nuts. when the peanut butter chips came on the market i decided 
to add 
them and the peanuts. everyone who has tasted them has said they are 
the best peanut butter cookies they have ever had. 
1 cup  peanut butter
1 cup  white sugar
1 cup  brown sugar
1 cup  shortening
2 large  eggs
2 Tbsp  water
2 cup  all-purpose flour
1 tsp  soda
1/2 tsp  salt
1 tsp  vanilla extract
1 package  (10 ounce) peanut butter chips
1 cup  finely chopped "cocktail peanuts"
mix all ingredients together. drop by teaspoonfuls onto baking sheet 
and flatten with a fork dipped in sugar. bake cookies at 350 degrees 
for 12 minutes. makes about 7 dozen cookies. 
peanut butter chews 
note: nicely soft and chewy, with just the faintest crunch 
around the edges, these cookies balance peanut butter flavor with the 
wonderful caramelized taste of dark brown sugar. 
1 cup  (2 sticks, 8 ounces) unsalted butter
1 cup  (8 ounces) dark brown sugar
1/2 cup  (3 1/2 ounces) granulated sugar
1/4 cup  (2 3/4 ounces) dark corn syrup
3/4 tsp  baking soda
1 tsp  salt
2 tsp  vanilla extract
2 large  eggs
2 cup  (19 ounces) creamy peanut butter
2 cup  (8 1/2 ounces) unbleached all-purpose flour
preheat the oven to 325 degrees. lightly grease (or line with 
parchment) two baking sheets. 
in a medium-sized bowl, cream together the butter, sugars, corn 
syrup, baking soda, salt, and vanilla. add the eggs one at a time, 
beating well after each addition. add the peanut butter, beating until 
the mixture is light and fluffy. stir in the flour. 
drop the dough by the tablespoonful onto the prepared baking sheets. 
bake the cookies for 15 minutes, until theyre a light golden brown 
around the edges. dont overbake or theyll be crisp, not soft. remove 
them from the oven and transfer to a rack to cool. yields: 5 1/2 dozen
