Gurkhas Plain Boiled Rice and Yellow Rice
plain boiled rice 
(recipes from the brigade of gurkhas collection) 
 
5 lb.  rice
5 pint  water
  salt to season
 
rice boiler 
pick and wash the rice. 
bring the water to the boil and add salt. rain the rice and stir until 
the water re-boils. adjust water level to barely cover the rice. 
simmer for 10 minutes (at this stage water may need re-adjusting 
according to the type of rice), cover with a lid, turn off the heat and 
allow to cook in its own heat for about 20 minutes. 
when cooked turn out into a serving dish and fluff up with a fork. 
 
rice steamer 
pick and wash the rice. 
put a maximum of 12 lbs of rice into each steamer tray, cover with water 
and add salt. apply heat to reach steaming point and cook for about 20 
minutes. 
reduce the heat to simmering point to keep the rice hot. 
when required for service, turn out into a serving dish and fluff up with 
a fork. 
 
 
yellow rice 
 
5 lb.  rice
5 pint  water
2 tsp  turmeric
  salt to season
 
pick and wash the rice. 
whisk the turmeric and water together 
proceed as for recipe for plain boiled rice (above) 
 
this recipe comes from a collection of recipes from the brigade of 
gurkhas (part of the british army) and is authentic. all recipes in this 
collection are for serving ten (10) persons. please do not alter this
