Elderberry Jam
 
2   qts crushed elderberries
6 cup  sugar
1/4 cup  vinegar
 
combine berries, sugar and vinegar in a large saucepot. bring slowly to a 
boil, stirring until sugar dissolves. cook rapidly until thick. as 
mixture thickens, stir frequently to prevent sticking. pour hot into hot 
jars, leaving 1/4 in head space. adjust caps. process 15 minutes in a 
boiling water bath. yield: about 3 pints 
 
 
elderberry jelly 
 
follow any recipe for berries. you may add 1 to 2 tablespoons of lemon 
juice to each qt. to improve flavor.
