quick winter veggies
 
try roasting your veggies alone or in combos. just trim, peel, and cut 
into small cubes. toss with enough olive oil or melted butter to coat. 
season with salt and pepper and roast at 400 f until beginning to 
caramelize (about 30 -40 minutes). stir occasionally so they don't stick. 
moisten with a little water or stock and season with your favorite herbs. 
 
some combos to get you started: carrots, onions, garlic, and winter squash 
(roast the carrots for 20 minutes, then add the rest) with sage, thyme, or 
cumin. or try rutabaga, celery root, turnips, and fennel bulb.
