lime ice with a splash of tequila
 
serves 8 
 
this sorbet has just a splash of tequila, which helps give it a 
smooth texture, and a whisper of a margarita flavor. 
 
2 cup  water
2 cup  sugar
2 cup  fresh lime juice (from about 15 limes)
2 Tbsp  finely chopped or grated lime zest
2 Tbsp  plus 2 teaspoons tequila
  mint sprigs and/or thin slices of lime for garnish
 
bring the water to a boil in a 2- or 3-quart saucepan and add the 
sugar. stir to dissolve, then turn the heat to very low and simmer for 
10 minutes while you squeeze the limes. it will thicken slightly. 
remove the sugar syrup from the heat and stir in the lime juice and 
zest. let sit for 1 hour. 
strain the lime mixture into a bowl, and press all the zest against 
the strainer to extract all the juice. stir in the tequila. freeze in 
an icecream freezer following the manufacturer's instructions, or 
(just as easy), cover and place in the freezer until just about frozen 
solid, about 6 hours. 
if not using the icecream freezer, chill 8 individual ramekins, 
sorbet dishes, or small bowls. remove the lime mixture from the 
freezer and cut with a sharp knife into 4 portions. place one portion 
in a food processor fitted with the steel blade and return the bowl 
with the lime mixture to the freezer. break up the mixture in the food 
processor, using the pulse action. turn on the machine and blend 
thoroughly until the mixture is uniform and fluffy. it will be almost 
white. transfer to 2 sorbet dishes and place the dishes directly in 
the freezer. repeat this step with the remaining 3 portions. when all 
of the dishes are filled, cover each one with plastic wrap, then with 
foil to secure. 
twenty minutes before serving, place the sorbets in your 
refrigerator. serve, garnishing each bowl with a thin slice of lime 
and/or a sprig of mint. 
 
advance preparation: this will keep for weeks in the freezer.
