Black Walnut Loaf Cake
 
2 cup  flour
2 tsp  baking powder
1/2 tsp  salt
1 cup  shortening
1/2 cup  chopped black walnuts
4   eggs, separated
1-1/4 cup  sugar
1 tsp  almond extract
 
Grease bottom of loaf pan (flour lightly). Measure flour, baking powder 
and salt into sifter. Cream shortening until soft in medium size bowl. 
Sift and add dry ingredients. Blend in walnuts. Beat egg yolks in second 
medium size bowl until thick and lemon colored. Stir in sugar and almond 
flavoring. Add to shortening-flour mixture. Beat egg whites until stiff 
but not dry; fold into egg-flour mixture. Pour batter into prepared pan; 
let stand at room temperature 20 minutes to help prevent cracking of top 
during baking. Bake in moderate oven at 350 degrees for 1 hour or until 
cake tester inserted in center comes out clean. Cool cake in pan for 5 
minutes. Loosen around edges with knife. Turn onto cake rack and cool.
