French Ham Souffle
 
4 Tbsp  Butter or margarine
4 Tbsp  Flour
1-1/2 cup  Milk
1 tsp  Salt
1/4 tsp  Cayenne pepper
1 cup  Cheese; grated
1/4 cup  Chives; finely chopped
1 cup  Ham; finely ground
6   eggs separated
 
Heat butter in a saucepan over medium heat; stir in flour, then slowly 
add milk, cooking until smooth and thickened, stirring constantly. Add 
seasonings, cheese, chives and ham. Add beaten egg yolks; mix well. 
Cool mixture; then fold in stiffly beaten egg whites. Bake in an 
ungreased 2-quart casserole in preheated 300 F. oven 1 1/4 hours. 6. Serve 
at once.
