Spinach Grits
 
1 cup  quick cooking grits
4 cup  boiling water
1/2 cup  margarine
1-1-1/4 oz.  package instant onion soup mix
1   8oz pkg grated sharp cheddar cheese
2   eggs, beaten
1/2 cup  milk
1   10 oz pkg frozen, chopped spinach cooked and drained
1/2 cup  grated sharp cheddar cheese
 
directions: cook grits in water according to package directions. stir 
grits continually so lumps will not form. add margarine, onion soup 
mix and cheese. remove from heat. cool a short time and beat in eggs 
and milk. fold in spinach. pour into buttered 9x13-inch dish or 
2-quart casserole. top with additional cheese. bake at 3500 for 45 
minutes to 1 hour. yield: 8 10 servings
